How to make it

  • In a 5 qt pot, brown beef, drain and set aside
  • Saute onion, carrots, celery and basil in same pan, about 5 minutes
  • Stir in flour
  • Add broth, potatoes and beef.
  • Cover, reduce heat and simmer until potatoes are tender, about 15 minutes
  • Add cheese, milk, salt and pepper.
  • Cook and stir until cheese melts.
  • Remove from heat and blend in sour cream
  • Serve.

    I have a version of this that doesn't call for sour cream - I'll have to add it next time. This is an absolutely delicious soup, rich and comforting.

    I make something like this but my family likes a little heat so I add some tomatoes with chiles. They love it in a bread bowl.
