Vegetarian Sweet and Sour Red Cabbage Spread

- 3 Tbsp butter shopping list
- 1 head red cabbage, coarsely shredded shopping list
- 2 tart cooking apples (like Granny smith), peeled chopped shopping list
- 1/2 cup raisins shopping list
- 1 1/2 quarts Cran-Grape or Cran-apple juice shopping list
- 1/2 cup granulated white sugar shopping list
- 1/4 cup brown sugar shopping list
- 1/2 cup white vinegar or champagne vinegar shopping list
- balsamic vinegar, to taste shopping list
- a couple drops liquid smoke, to taste shopping list
- salt, to taste shopping list
- 1/2 teaspoon freshly ground black pepper, to taste shopping list
How to make it
- In a heavy pot (like a Le Cruset) , melt the butter.
- Add the shredded cabbage and stir to coat well.
- Add the apples and juice and allow to simmer for 1 1/2 hours, stirring frequently.
- Add the sugars, vinegars, and Liquid Smoke, stir well, and simmer for another 30 minutes.
- Season to taste with salt and pepper, and stir well.
- Chill in refrigerator for at least an hour before serving, to allow flavors to meld. (If the spread doesn’t have enough moisture, feel free to add more juice or vegetable broth.)
- Try it as a dip with crackers, pita bread chips, or apple wedges!

Just finished dinner. It was a hit! Went so well with the ham gave it the nice tart/sweet change and no one knew there was no bacon or bacon fat until my daughter commented about it. Making a couple of sandwiches for work tomorrow and taking them wit...more
