How to make it

  • In a heavy pot (like a Le Cruset) , melt the butter.
  • Add the shredded cabbage and stir to coat well.
  • Add the apples and juice and allow to simmer for 1 1/2 hours, stirring frequently.
  • Add the sugars, vinegars, and Liquid Smoke, stir well, and simmer for another 30 minutes.
  • Season to taste with salt and pepper, and stir well.
  • Chill in refrigerator for at least an hour before serving, to allow flavors to meld. (If the spread doesn’t have enough moisture, feel free to add more juice or vegetable broth.)
  • Try it as a dip with crackers, pita bread chips, or apple wedges!

    Just finished dinner. It was a hit! Went so well with the ham gave it the nice tart/sweet change and no one knew there was no bacon or bacon fat until my daughter commented about it. Making a couple of sandwiches for work tomorrow and taking them with me. The verdict, here is my healthy version now. Took part of the batch I made last night and drove it to my friends house at 2 a.m. (both girls avoid meat)and Shelley hit it with a boat motor today and made it into a spread and put it on grilled portobellos and then tried it on a cold salad, warm bean salad, cucumbers, and shredded carrots and is going to try fish next. Gave them the recipe. Shel and Tash are going to make their own and experiment. Thanks for taking the time to create the veggie version. I can feel my cardiologist smiling already and you got rave reviews from Shel and Tash and a huge Thank you from them and us!
