Ingredients
  • 1 kilo pumpkin
  • 1 small cup of rice
  • 1 small cup of olive oil
  • 2 spoonfuls sugar
  • 1 small spoon of salt, little pepper
  • 1 small spoon of cinnamon
  • fennel
  • almonds (handful)
  • raisins (handful)

Directions
  1. We peel the pumpkin and remove the seeds and threads preferably with a spoon and we cut it in small cubes of about 1 cm thick. We place in a bowl and put the finely chopped fennel and all the other ingredients i.e. the spices, rice, sugar, oil, the almonds, pounded but not peeled, and the raisins and we mix them.
  2. We follow the instructions as I have given in the recipe for dough. We place a small plate of about 10 cm. diameter and cut in round circles. On one side we place a spoonful of the stuffing and cover with the other half. We take both sides and press with finger so that they stick together, or press with a fork.
  3. We place in an oiled baking pan, and place in a pre-heated oven at 180ο and bake for 30 minutes until they have a nice colour.
  4. Please note that we can replace fennel with dill, rice with bulgur wheat and can omit the raisins.
  5. With the above quantity we can bake about 30 pumpkin pies but if we like we can make them in any size we like, or even if we place half dough underneath then the filling and one above. In this case it is better to put some oil on the last one and trace the pieces with a sharp knife only on the surface.

I made these and they were fantastic! I did need to ad lib however as I did not have fennel, so added mint instead. Can't wait to make these next time as they were intended!
