Christmas Morning Cranberry Orange Cake

- 2 1/4 cups flour shopping list
- 1 cup granulated sugar shopping list
- 1/4 teaspoon salt shopping list
- 1 teaspoon baking powder shopping list
- 1 teaspoon baking soda shopping list
- 1 cup chopped nuts shopping list
- 1 cup diced dates (optional) shopping list
- 1 cup fresh cranberries shopping list
- Grated rind of 2 oranges shopping list
- 2 eggs, beaten with whisk shopping list
- 1 cup buttermilk shopping list
- 3/4 cup vegetable oil shopping list
- glaze shopping list
- 1 cup orange juice shopping list
- 1 cup granulated sugar shopping list
How to make it
- In large bowl, mix together first 5 ingredients
- Add nuts, dates*, cranberries, and orange rind
- In medium bowl, whisk eggs until beaten
- Whisk milk and oil into beaten eggs, combining all
- Add to flour, fruit mixture
- Stir until blended
- Pour into well-greased 10 inch tube pan
- Bake 1 hour at 350 degrees
- Let stand until partially cool
- Remove cake from pan, and place on rack that has been placed over wide dish
- Combine sugar and orange juice
- Heat in microwave until sugar has dissolved
- Pour over warm cake
- Continue to pour over cake until all juice has been absorbed
- Turn cake upside-down to coat underside also
- Cool thoroughly
- Wrap in foil and refrigerate 24 hours before serving.
- It is supposed to last for 2 weeks in refrigerator, but the longest it has ever lasted at my house is about 2 days!!
- *NOTE: I LOVE DATES, BUT I PREFER THIS ONE WITH CRANBERRIES ONLY
