Christmas Morning Cranberry Orange Cake Recipe

Ingredients

2 1/4 cups flour

1 cup granulated sugar

1/4 teaspoon salt

1 teaspoon baking powder

1 teaspoon baking soda

1 cup chopped nuts

1 cup diced dates (optional)

1 cup fresh cranberries

Grated rind of 2 oranges

2 eggs, beaten with whisk

1 cup buttermilk

3/4 cup vegetable oil

GLAZE

1 cup orange juice

1 cup granulated sugar

Directions

In large bowl, mix together first 5 ingredients

Add nuts, dates*, cranberries, and orange rind

In medium bowl, whisk eggs until beaten

Whisk milk and oil into beaten eggs, combining all

Add to flour, fruit mixture

Stir until blended

Pour into well-greased 10 inch tube pan

Bake 1 hour at 350 degrees

Let stand until partially cool

Remove cake from pan, and place on rack that has been placed over wide dish

Combine sugar and orange juice

Heat in microwave until sugar has dissolved

Pour over warm cake

Continue to pour over cake until all juice has been absorbed

Turn cake upside-down to coat underside also

Cool thoroughly

Wrap in foil and refrigerate 24 hours before serving.

It is supposed to last for 2 weeks in refrigerator, but the longest it has ever lasted at my house is about 2 days!!

*NOTE: I LOVE DATES, BUT I PREFER THIS ONE WITH CRANBERRIES ONLY

For the glaze, I used orange juice and powdered sugar rather than granulated to make a pretty glaze on top. I also added dash of cinnamon, and almond and vanilla extract. YUM!
