Ingredients

How to make it

  • In large bowl, mix together first 5 ingredients
  • Add nuts, dates*, cranberries, and orange rind
  • In medium bowl, whisk eggs until beaten
  • Whisk milk and oil into beaten eggs, combining all
  • Add to flour, fruit mixture
  • Stir until blended
  • Pour into well-greased 10 inch tube pan
  • Bake 1 hour at 350 degrees
  • Let stand until partially cool
  • Remove cake from pan, and place on rack that has been placed over wide dish
  • Combine sugar and orange juice
  • Heat in microwave until sugar has dissolved
  • Pour over warm cake
  • Continue to pour over cake until all juice has been absorbed
  • Turn cake upside-down to coat underside also
  • Cool thoroughly
  • Wrap in foil and refrigerate 24 hours before serving.
  • It is supposed to last for 2 weeks in refrigerator, but the longest it has ever lasted at my house is about 2 days!!
  • *NOTE: I LOVE DATES, BUT I PREFER THIS ONE WITH CRANBERRIES ONLY
