Loaded Baked Potato Soup Recipe
This is rich, creamy, tasty, and super easy! It's a guessipe, as I have never measured. Adjust to get the thickness you desire.

Ingredients
  • 3 lbs red potatoes, unpeeled, cut into large chunks (I have used russets and Idahoes as well, they work equally well)
  • 2 c. water
  • 1 carton chicken stock
  • 1 white onion, chopped
  • 1/4 - 1/2 stick margarine or butter
  • 2 T parsely
  • seasoned salt
  • garlic pepper
  • 2 T.chopped garlic
  • 1 large can cream of mushroom soup (Family size - or use 2 cans. I have also used 1 cream of mushroom and 1 cream of celery, even cream of chicken)
  • 1/2 c. sour cream
  • 1/2 c. milk
  • 1/2 c. cream (or use 1 c milk, or 1 c cream)
  • 2 T margarine or butter
  • 3 cups shredded cheese, divided into 2 and 1 (I use a colby jack blend and a rough shred cheddar)
  • Chives
  • Bacon Bits (OR, fry a few strips of bacon until crisp, then crumble)

Directions
  1. Put potatoes in large stove top pot, cover with water and chicken stock. (May need more liquid)
  2. Boil with onion, seasoned salt, garlic pepper, margarine, garlic, and parsley - uncovered, to allow liquid to reduce
  3. When potatoes are just tender add the mushroom soup, sour cream, milk, cream, additional margarine and one c. cheese
  4. Cook another 10 minutes or longer
  5. Top each serving with more cheese, chives, and bacon bits
  6. ** This really is a guessipe, so be prepared to add some more milk and allow it to reduce a little more to get it thick and creamy **

Hey you. :) Gonna be cold and rainy here the next few days and I just might do up a pot of this. How big is a large can of mushroom soup? And, I only have russet potatoes. Will probably use them and peel.

Oh Sparow, awesomely good soup! I will admit I was a bit leery about using 2 cans of mushroom soup (last time I used that soup on something it was not so tasty) but in here...mmmm. Added flavor without being too mushroomy. Perfect soup for this dreary, cloudy day. :)
