Turkey Stock For Gravy Etc

- 4 nice turkey wings. break apart.. you will have 3 pieces from each wing shopping list
- 2 whole ribs of celery washed shopping list
- 2 whole carrots washed shopping list
- 2 bay leaves shopping list
- handful of whole parsley.. stems and all shopping list
- 2 cloves garlic smashed shopping list
- 1 whole onion halved... washed, skin and all shopping list
- 3 quarts of water shopping list
- 2 spoons full of chicken stock paste shopping list
- 1/2 teaspoon whole pepper shopping list
- 3 fresh sage leaves.. I like more shopping list
How to make it
- Combine all in a LARGE kettle
- Bring to a boil
- Lower heat to just a bubble.. low
- Simmer for 2-4 hours
- I usually take the meat out about half way through... before it gets to done. Let it cool.. debone and put bones back in the pot for the rest of the time.
- While this is simmering... skim off any foam..
- Add water as needed if it gets to low...
- When done.. let cool for about an hour.
- Adjust seasonings
- Strain through cheese cloth, throw away all veggies.
- Put in quart zip locks and freeze flat.
- Cut the cooled meat in chunks and freeze seperate for other dishes.
- The stock.. use for your dressing, and gravy...
- You WILL taste the diffrence
