New England Fish Chowder

- ¼ lb salt pork, diced small shopping list
- 1 C chopped yellow onion shopping list
- ½ C chopped celery shopping list
- 2 C diced (large), russet potatoes shopping list
- 2 or 3 Tbl cornstarch (depending on thickness desired) shopping list
- 2 C water shopping list
- 1 Bay leaf shopping list
- 1 tsp dried dill weed shopping list
- 1 Tbl dried parsley shopping list
- 1 tsp salt shopping list
- ½ tsp thyme shopping list
- ½ tsp pepper shopping list
- ¾ lb each of cod, haddock and Hake ( add any other fish or shellfish to your taste) shopping list
- 2 C half and half shopping list
- Chopped parsley shopping list
How to make it
- Mix together flour and cornstarch and set aside
- Cook salt pork in 5 quart Dutch oven or kettle over medium heat until crisp, stirring until golden
- Add onion and celery to drippings, cook and stir until softened.
- Stir in potatoes, cook 1 minute
- Add water, Bay leaf, dill, salt, pepper and bring to a boil over high heat. Reduce to low and cook until potatoes are fork-tender.
- Add fish; simmer covered until fish begins to flake with a fork. then break fish into chunks.
- Mix flour and cornstarch together with a small amount of the half and half
- Discard Bay leaf, add the 1/2 & 1/2 and the half and half mixture heat 2 minutes and adjust thickness if needed.
- Adjust seasonings
- Garnish with parsley and a pat of butter, serve with oyster crackers

I make something like this when Hubby has a bad day fishing and only gets one or two! I KNOW I will love this one. Perfect!

Thanks -- my husband is a fisherman; on Sunday he caught a 43-inch Rockfish. We've eaten filets (oh so good) and now I'm looking for a chowder recipe. I'm trying your recipe tonight.

Made the chowder -- and as I suspected -- it is a hit. We added Old Bay Seasoning to the chowder at the table, and it added a nice kick.
