Ingredients

1 lb sauerkraut, well drained

1 small onion, chopped

1/2 to 1 teaspoon caraway seeds

1/2 cup mayo

1/2 cup thousand island dressing

8 oz shredded corned beef

1 lb shredded swiss cheese

cocktail rye bread for serving

Directions

Preheat oven to 350 degrees F (175 degrees C).

Mix sauerkraut, onion and caraway seeds. Spread mixture into a 9x13-inch baking dish.

In a small bowl, combine mayonnaise and dressing.

Layer corned beef, Swiss cheese, and the mayonnaise-dressing mixture on top of the sauerkraut.

Bake for 20 to 25 minutes.

Serve with cocktail rye bread.
