Pineapple Cookies Recipe

Ingredients

1/2 cup shortening

1/2 cup brown sugar

1/2 white sugar

1 egg, beaten

1/2 tsp. vanilla

2 cups flour

2 tsps. baking powder

1/4 tsp. baking soda

1/4 tsp. salt

1 cup crushed pineapple

2/3 cup chopped walnuts (optional)

Directions

Cream shortening and sugars.

Add beaten egg and vanilla.

Add dry ingredients.

Drain pineapple and add to mixture, then nuts and flavouring.

Drop from teaspoon onto a greased baking sheet.

Bake at 350 degrees for 15-20 minutes,

Makes approximately 4 dozen

Very interesting recipe as I LOVE anything with pineapples. Just wondering if i can use 1/2 cup butter instead of shortening? Will it change the taste and consistency of your cookies?

I often use half butter and half shortening but I don't know about substituting the butter for shortening.
