Nemos Really Yummy Egg And Tomato Salad Recipe

I had to think of something light and tasty for lunch. I was dreading the thought of salad because it’s really cold lately, but I was pleasantly surprised at the wonderful flavor! It tasted like it had mayo on it, but it didn't. Hope you enjoy!

Ingredients
- 2 hard boiled eggs - i took them out after 5 minutes of boiling, cut into small pieces
- 1 tomato - cut into small cubes (i used 1/2 since the other half went to a toasted sandwich for somebody else)
- 2 cups of mixed lettuces - i use pre-packed bags that our supermarkets prepare daily, already washed and torn into pieces
- 1 tablespoon olive oil
- salt and freshly ground pepper to taste
Directions
- Place lettuce mix into serving bowl
- Add the tomato and egg
- Sprinkle with salt and pepper according to your taste
- Drizzle with olive oil
- Toss it all well and enjoy!
