How to make it

  • Seed peppers. Stuff peppers with half the cheese and pinch closed. Combine remaining cheese with sausage, and mix well. Mix in baking mix, 1/3 at a time to sausage mixture. Divide into 16 portions. Press each portion 1/4 inch thick. Place 1 pepper on each portion and shape sausage mixture into oval around pepper, enclosing peppers completely. Roll each "egg" in coating mix; dip into beaten eggs and roll again in coating mix. Arrange in shallow baking dish. Bake at 325 degrees for 20 - 25 minutes or until golden brown. Serve warm.

  • Mel's notes: Sixteen peppers were a lot for our crowd. I froze about half the batch.
