Armadillo Eggs - Stuffed Jalepenos Recipe

Armadillo Eggs - Stuffed Jalepenos Recipe
Very tasty appetizer for those who like it zesty. If you get the hot Italian sausage, it will add to the heat.

Ingredients
  • 16 Small canned jalapeno peppers
  • 1 Pound monterey jack cheese, shredded
  • 8 Ounces hot sausage
  • 1-1/2 Cups baking mix
  • 1 Package shake and bake coating mix for pork
  • 2 eggs, beaten

Directions
  1. Seed peppers. Stuff peppers with half the cheese and pinch closed. Combine remaining cheese with sausage, and mix well. Mix in baking mix, 1/3 at a time to sausage mixture. Divide into 16 portions. Press each portion 1/4 inch thick. Place 1 pepper on each portion and shape sausage mixture into oval around pepper, enclosing peppers completely. Roll each "egg" in coating mix; dip into beaten eggs and roll again in coating mix. Arrange in shallow baking dish. Bake at 325 degrees for 20 - 25 minutes or until golden brown. Serve warm.

  3. Mel's notes: Sixteen peppers were a lot for our crowd. I froze about half the batch.

Delicious! I had forgotten about this one. Thanks so much for reminding me.

I had to look with a name like that. Do you have armadillos in Florida?

That sounds like a good one to try with chorizo. Yummers. Bookmarked to try. Thanks for posting.
