Grand Prize Winner Holiday Southern Fig Cake Recipe
This was the GRAND PRIZE WINNER in Southern Living's Holiday Contest years ago. It is very moist and delicious. The presentation on a white cake stand is festive & lovely. Fig cakes are very tasty and special.

Ingredients
  • 3 large eggs
  • 1 cup sugar
  • 1 cup vegetable oil
  • 1/2 cup buttermilk
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground nutmeg
  • 1 1/2 cups fig preserves
  • 1/2 cup applesauce
  • 1 cup chopped pecans, toasted
  • Cream Cheese Frosting
  • Garnishes: dried figs, fresh raspberries, fresh mint sprigs
  • CREAM CHEESE FROSTING
  • 1 stick unsalted butter
  • 1-8 ounce package cream cheese, softened
  • 2 teaspoons vanilla
  • 1-16 ounce box powdered sugar

Directions
  1. Beat first 3 ingredients at medium speed with an electric mixer until blended.
  2. Add buttermilk and vanilla; beat well.
  3. Combine flour and next 5 ingredients; gradually add to buttermilk mixture, beating until blended.
  4. Fold in fig preserves, applesauce, and toasted pecans.
  5. (Batter will be thin.)
  6. Pour batter into 2 greased and floured 8-inch round cakepans.
  7. Bake at 350° for 35 to 40 minutes or check with wooden pick
  8. Cool on wire racks 10 minutes;
  9. Remove from pans, and cool completely on wire racks.
  10. CREAM CHEESE FROSTING
  11. Using electric mixer, cream butter and cream cheese, until VERY light and fluffy
  12. Add vanilla, mix well
  13. Gradually add powdered sugar, mixing well
  14. Spread Cream Cheese Frosting between layers and on top and sides of cake
  15. Store in refrigerator. Garnish, if desired.
  16. Note: Braswell's Pure Fig Preserves was used. Coarsely chop figs, if necessary.

This is a great cake! I have a huge fig tree that is very happy supplying me with lots of figs and I am always looking for wayS to use 'em. I made a boiled buttermilk glaze for this cake and it was wonderful. Thanks for the recipe!
