How to make it

  • Preheat oven to 400F. Bake potatoes until tender, then cut in half. Scoop out insides of potatoes, place pulp in mixing bowl, reserve skins. In medium saucepan, add 2 Tbl margarine, onion, and bell pepper - saute until tender. Add tomatoes, simmer 2 minutes, and set aside. Combine potato pulp, milk, salt and pepper, and cajun seasoning, fold in veggie mixture. Place potato shells on baking sheet, and spoon potato mixture evenly into them. Dot with remaining margarine, sprinkle with paprika, and bake at 400F for 20 minutes. Remove from oven, sprinkle with shredded cheddar, if desired, and serve immediately. http://flavorsofitaly.blogspot.com/

    Yes, it definitely helps to get the kids to eat their veggies! Most kids will eat baked potatoes, especially with the fun stuff like butter, cheese, and bacon - it's pretty easy to sneak the veggies in here. ;-) When my son was a child, this was the only way I could get most veggies into him, lol.

    My silly daughter can not stand twice baked potatoes the boring way, now, this would be right up her alley. She has good taste and so do you, these will be a great addition to the dinner table. Nice post.

    What fun. When our daughter was a child I used to hollow out baked potatoes and add all sorts of vegetables to the pulp, put it all back, and top with cheese for her. That was a favorite. This is similar and must be delicious.
