Ingredients
  • 700 grams boneless chicken breast cut in 3 cm cubes
  • 4 table spoons olive oil
  • 1/2 cup white wine
  • 3 gloves garlic
  • 2 medium size potatoes, boiled, pealed and cut in 2 cm cubes.
  • 1 table spoon pine nuts
  • 1/2 cup Fresh Basil leaves
  • 1 table spoon Parmesan cheese
  • 1 light cup cream
  • 1/2 cup fresh coriender leaves chopped
  • 1/2 tea spoon salt
  • 1/2 tea spoon Black pepper
  • 1/2 tea spoon sugar

Directions
  1. To make the Pesto, combine the basil leaves, 1 table spoon olive oil, Parmesan cheese, pine nuts and 1 glove of garlic in a grined/mixer and mix to form a paste. if thick, add a bit of white wine.
  2. Heat the remaining olive oil in a pan and fry the rest of the garlic for one minute. then add the wine and pesto you prepared.
  3. When it starts boiling add the chicken cubes, salt, pepper, sugar and mix gently. then add the cream and mix.
  4. When the chicken is done, add the potatoes and coriender leaves.
  5. Mix for 2 minutes, remove of the stove and place on a serving plate.
  6. Serve with wild rice or fettuccini.
  7. Enjoy

I have never tried to make my own pesto, but I so love the stuff! Your recipe looks uncomplicated and very tasty - I am printing it out and putting it on the menu. Thanks for the post!


This sounds very good. I was looking for something a little different than I usually make with chicken. Going to try it today.
