Zucchini Apple Pie Recipe

Ingredients

Crust:

4 C Flour

2 C Sugar

1/2 tsp Salt

3 sticks of Butter or Margarine, softened

Filling:

Zucchini...6-8 C peeled and de-seeded.

2/3/ C lemon juice

1 C Sugar

1/4 tsp nutmeg

3/4 c raisins

1 tsp cinnamon

salt,dash

Directions

Reserve 1/2 c of pie crust mixture and set aside.

Cook zucchini in lemon juice, until tender. Add in order, 1 c sugar, nutmeg, raisins, cinnamon dash of salt,and 1/2 c of the crust. Stir until thickened, let cool slightly.

Put 1/2 of crust mix in bottom of a 9x13 pan. Bake @ 375 for 10 min. Pour cooled zucchini mixtureon crust. Sprinkle the rest of the crust mixture on top of zucchini, and bake @ 375 for 40 minutes.
