How to make it

  • Reserve 1/2 c of pie crust mixture and set aside.
  • Cook zucchini in lemon juice, until tender. Add in order, 1 c sugar, nutmeg, raisins, cinnamon dash of salt,and 1/2 c of the crust. Stir until thickened, let cool slightly.
  • Put 1/2 of crust mix in bottom of a 9x13 pan. Bake @ 375 for 10 min. Pour cooled zucchini mixtureon crust. Sprinkle the rest of the crust mixture on top of zucchini, and bake @ 375 for 40 minutes.

    I love zucchini and apples as well as anything apple flavored and have lots of both. This in on the to do list! No apples huh?? Let you know this weekend how I fared.
