How to make it

  • Heat olive oil in a nonreactive saucepan over medium heat
  • Saute onion and garlic until soft
  • Add remaining ingredients
  • Simmer uncovered over low heat untiil thick, about 30 minutes
  • Stir frequently to prevent sticking, adding a little more orange juice if necessary
  • Remove softened chipotles, chop and stir back into chutney
  • Optional: Add nuts in last 10 minutes of cooking
  • This is wonderful to have to pour over cream cheese for an appetizer
  • SWEET POTATO TOSS
  • This chutney is great tossed with sweet potato slices that have been cut into 1/2 inch slices, brushed with olive oil, grilled, then cut into cubes. After tossing, sprinkle with coarsely ground black pepper

    Sounds likE it has a lot of good flavors coming together - I know I would like this on pork tenderloin or chicken breasts...thanks RMB!
