Awesome Autumn Apple Chipotle Chutney

- 1 tablespoon olive oil shopping list
- 1/4 cup chopped red onion shopping list
- 1 clove garlic, minced shopping list
- 1 tablespoon grated fresh ginger shopping list
- 1 cup fresh orange juice shopping list
- 6 tablespoons red wine vinegar shopping list
- 1/2 cup packed light brown sugar shopping list
- 2 tablespoons honey shopping list
- 4 granny smith apples, peeled, cored and diced shopping list
- 1 red bell pepper, chopped shopping list
- 5 chipotle peppers, stemmed and seeded shopping list
- 2 poblano chiles, roasted, peeled and chopped shopping list
- NOTE: Can play around a little bit with this....can throw in some dried cranberries, add some nuts. etc. Suit your taste. shopping list
How to make it
- Heat olive oil in a nonreactive saucepan over medium heat
- Saute onion and garlic until soft
- Add remaining ingredients
- Simmer uncovered over low heat untiil thick, about 30 minutes
- Stir frequently to prevent sticking, adding a little more orange juice if necessary
- Remove softened chipotles, chop and stir back into chutney
- Optional: Add nuts in last 10 minutes of cooking
- This is wonderful to have to pour over cream cheese for an appetizer
- SWEET POTATO TOSS
- This chutney is great tossed with sweet potato slices that have been cut into 1/2 inch slices, brushed with olive oil, grilled, then cut into cubes. After tossing, sprinkle with coarsely ground black pepper

This is fabulous! I make a similar recipe, but not as complex nor as flavourful! Thanks for the post, RoseMaryBlue; this is much better than my old stand-by staple :)
