Key Lime Chicken Recipe
I love lemon chicken and when we had a surplus of limes, we juiced them and added the molasses and ginger to make a marinade. I like a good long soak for the thighs at least overnight, breasts won't take as long perhaps eight hours.

Ingredients
  • 1 cup fresh Lime Juice - I used regular persian limes, not real key limes it would take an eternity to juice those tiny things
  • 1 1/2 teaspoon Splenda
  • 1 teaspoon molasses
  • 2/3 cup Water
  • 2 teaspoons Salt
  • 1/2 teaspoon Pepper
  • 1 teaspoon Thyme or six sprigs of fresh thyme (my favorite)
  • 2 Tablespoons Olive Oil
  • 1 Tablespoon Fresh Ginger, peeled and chopped
  • 3 pounds Chicken pieces *thighs are terrific this way* and more economical than the boneless skinless boring breasts

Directions
  1. In a bowl or blender mix all ingredients (except chicken) until well blended. This will create a marinade.
  2. Pour marinade over chicken pieces. Allow to stand in marinade in the refrigerator overnight.
  3. Preheat oven at 350°F. Drain and reserve marinade.
  4. Place chicken in baking dish.
  5. Bake for 1 hour and 25 minutes, basting with marinade every 20 minutes.

This sounds just wonderful. If I don't bake a whole chicken, it's baked thighs! Thighs are so tasty, and they are our favorite piece of chicken. Fresh thyme just goes with chicken. I am so glad that you posted this recipe! Thanks so much. :)

Alterations


Question- what would happen if you cooked the chicken right in the marinade? Maybe serve it over rice with roasted gengered carrots? PS-kudos on the proper use of marinade.
