I love lemon chicken and when we had a surplus of limes, we juiced them and added the molasses and ginger to make a marinade. I like a good long soak for the thighs at least overnight, breasts won't take as long perhaps eight hours.

Question- what would happen if you cooked the chicken right in the marinade? Maybe serve it over rice with roasted gengered carrots? PS-kudos on the proper use of marinade.
