Spinach And Yogurt Soup Recipe
Nice smooth flavor soup and better with the addition of crumbled crisped bacon (there goes the healthy aspect)

Ingredients
  • 10 oz. frozen leaf spinach
  • 1 medium onion chopped
  • 3 scallions finely chopped
  • 2 tbl vegetable oil
  • ½ cup long-grain rice
  • 3½ cups water
  • 1 tsp tumeric
  • salt and white pepper to taste
  • 2 ¼ cups plain yogurt
  • 1 really really crushed clove of garlic

Directions
  1. Defrost frozen spinach.
  2. Drain and cut into strips.
  3. In a large saucepan, fry the onions and scallions in the oil until soft.
  4. Add rice and stir to coat with oil.
  5. Pour in water, add tumeric, and season with salt and pepper. Bring to a boil,
  6. Simmer for 15 minutes.
  7. Add the spinach and cook for 5 minutes or until softened and rice is tender.
  8. Beat yogurt with garlic and beat into the soup.
  9. Heat through but don't let it boil

If you get a lean bacon... cook and blot.. it is not that bad.. You can not cut it all or you won't stick to it... I cook in pan, then put in micro on paper towels to finish getting the grease out...


This sounds really, REALLY good. *Adds plain yogurt to the shopping list, since vanilla yogurt doesn't seem like it would work well.*
