I was thinking that next time I'd splot the oil in half and substitute applesauce? I've never actually done that, but I thought that the apple taste would marry well with the cookie. Even if I added apple chunks... or even the classic raisin would be yummerific.

We are baking these at this very moment. We did not have nutmeg, so we substituted it with cinnamon/ginger. Once we taste test them, we will let you know how they turned out!!

MMMM. I will save this recipe. I did tweak it a bit though. I added a 1/4 cup less sugar (raw cane sugar that is) and about a 1/4 cup more pumpkin puree & baked them for 14 min (mmm doughy). & since these cookies look essentially the same coming out of the oven as they do going in, you have to shape them into what you want them to look like, so don't just plop some dough on the sheet with a spoon unless you really don't care... They are cute as hearts, & for my 2nd batch I made flat-ish circles out of the dough with a spatula & pressed a prune in the middle (before baking)--DE-LISH.
