Apple N Toffee Bites Recipe
A delightful treat of apples and toffee in a dessert square ~ the perfect autumn flavour combination!

  • Crust:
  • 1/2 cup unsalted butter, melted
  • 1/4 cup brown sugar
  • 1 cup all-purpose flour
  • 1/2 cup rolled (not instant) oats
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • Filling:
  • 1 cup peeled, diced apple ~ about 1/2" dice, apple of your choice (I like granny smith for the sweet-tart balance with the rest of ingreds)
  • 2 large eggs
  • 1/2 cup brown sugar
  • 2 tsp vanilla
  • 1/3 cup all-purpose flour
  • 1/2 tsp baking powder
  • Icing:
  • 1/2 cup unsalted butter, room temp
  • 3 Tbsp brown sugar
  • 1 tsp vanilla
  • Cinnamon (for sprinkling)

Directions
  1. NOTE: Prep time includes chilling before frosting.
  2. Preheat oven to 350F. Grease a 9" baking pan and line with two large squares of parchment paper, cut so that the parchment hangs over the edge of pan (you'll use as "handles" later for lifting the baked square out).
  3. For base, blend butter well with brown sugar. Add flour, oats, cinnamon and salt and stir together until a crumbly texture forms. Press into bottom of prepared pan; bake for 18 minutes. Cool on a wire rack while you prepare the filling.
  4. For filling, whisk eggs, brown sugar and vanilla to combine. Whisk in flour and baking powder until all are thoroughly combined.
  5. Sprinkle diced apple over cooled crust. Pour egg mixture over apples (it will just cover the fruit). Bake for about 25 minutes or until filling is set and just starting to brown.
  6. Cool to room temperature, then chill completely for about 2 hours.
  7. For icing, beat butter with brown sugar and vanilla until smooth. Spread over chilled filling and sprinkle with cinnamon. Chill again for about 20 minutes to allow icing to set.
  8. Remove from pan by lifting parchment and slice into about 2 dozen squares.
  9. Will keep in fridge for about 5 days.
