I got this recipe from my mom, she makes this quite often

Ingredients
  • 1 can (12 oz) evaporated milk
  • 1 can (5 oz) evaporated milk
  • 2 eggs
  • 1/2 C sugar
  • 1-1/2 tsp vanilla
  • 1/4 tsp nutmeg
  • 2 C cooked rice
  • 1/2 C raisins

Directions
  1. Preheat oven to 350*
  2. In a large bowl beat milk, eggs, sugar, vanilla & nutmeg until combined.
  3. Stir in rice & raisins
  4. pour into greased 1-1/2 qt casserole & place in a pan of hot water.
  5. bake 45 min
  6. then stir
  7. continue to bake an additional 20-30 min or until knife inserted in center comes out clean
  8. serve warm or cold
