Deconstructed Sushi Salad Recipe
I love sushi but didn't have enough nori to make rolls. So I deconstructed the california rolls we all know and love into this warm, yummy sushi salad!

Ingredients
  • 1 full sheet nori
  • 2c brown "minute" rice
  • 1 small cucumber chopped
  • 1 avocado peeled, pitted and chopped
  • 1 pkg lump or chunk style imitation crab
  • 1/4 cup seasoned rice vinegar
  • 2TBS sugar
  • water to cook rice
  • soy sauce and wasabi optional

Directions
  1. Cook rice as per package directions
  2. Meanwhile heat vinegar and sugar in microwave for 20ish seconds to dissolve the sugar
  3. One rice is fully cooked pour sugared vinegar over the rice, cover and let stand until it's absorbed (or at least mostly absorbed)
  4. crumble nori (or cut into small strips with kitchen scissors) over top of rice
  5. add in crab, avocado and cucumber
  6. combine and heat over low heat for 1-2 minutes
  7. serve with soy and wasabi on the side to mix in if desired
