Ingredients
  • 3/4 c whole spelt (or wheat) flower
  • 3/4 c oats
  • 1/2 tsp salt
  • 1/2 tsp soda
  • *****
  • 1 c smooth peanut butter
  • 1/2 c honey
  • 1 egg
  • 2 tsp vanilla
  • *****
  • 2 - 3 ounces of dark chocolate - chopped (or 1/4 - 1/3 c)
  • 2 - 3 Tbsp chopped candied orange peel - &/OR candied ginger -
  • OR 1/4 c chopped dried fruit like dates or apricots
  • 1/4 c chopped pecans (optional)
  • *if you want these to look more like classic monster cookies, instead of the fruit above, add 1/3 c dark M&M's, or find natural candy-coated chocolate candies at the health food store - check the ingredients to make sure they don't contain the chemical food coloring that many are allergic to.

Directions
  1. Mix wet and dry separately, then combine and mix well.
  2. Mix in chocolate and fruit.
  3. Drop heaping teaspoons of batter on a parchment-lined cookie sheet. Flatten with a fork if you like.
  4. Bake in a preheated oven at 375 (350 if using dark or uninsulated pans, and/or if your oven is extra hot) for 8-12 minutes. They're ready when the edges are slightly browned - keep checking as honey browns fast.
  5. (originally on pattycake.ca)
  6. Mmmm!

I'm always looking for healthier alternatives to classics, this is perfect!

This would be a great alternative to lots of sweets in a Hallowe'en bag!

That sounds like an excellent "healthier" version of the Monster cookie - I'm looking forward to trying these...just printed it off. Thanks!

I'm seeing this about a week too late. We just made a HUGE batch of monster cookies. I'll definitely try this one next time around. Sounds yummy! And if I could eat them with less guilt... all the better!! =)

So yummy, I have never heard of 'monster cookies' but these are right up my alley. I'm so glad to have found them. Thanks for posting.

When your Indian honey fudge is back, I'd like to know! thanks. and I am going to bake the honey almond macaroons. when I do cookies next, I'll use this monster cookie recipe. love the list of healthier choices rather than the big corporate "sludge". thanks lots, pattycake!!

These sound pretty healthy, I'm really trying to lose a lot of weight and looking for healthy recipes.
