Monster Cookies

- 3/4 c whole spelt (or wheat) flower shopping list
- 3/4 c oats shopping list
- 1/2 tsp salt shopping list
- 1/2 tsp soda shopping list
- ***** shopping list
- 1 c smooth peanut butter shopping list
- 1/2 c honey shopping list
- 1 egg shopping list
- 2 tsp vanilla shopping list
- ***** shopping list
- 2 - 3 ounces of dark chocolate - chopped (or 1/4 - 1/3 c) shopping list
- 2 - 3 Tbsp chopped candied orange peel - &/OR candied ginger - shopping list
- OR 1/4 c chopped dried fruit like dates or apricots shopping list
- 1/4 c chopped pecans (optional) shopping list
- *if you want these to look more like classic monster cookies, instead of the fruit above, add 1/3 c dark M&M's, or find natural candy-coated chocolate candies at the health food store - check the ingredients to make sure they don't contain the chemical food coloring that many are allergic to. shopping list
How to make it
- Mix wet and dry separately, then combine and mix well.
- Mix in chocolate and fruit.
- Drop heaping teaspoons of batter on a parchment-lined cookie sheet. Flatten with a fork if you like.
- Bake in a preheated oven at 375 (350 if using dark or uninsulated pans, and/or if your oven is extra hot) for 8-12 minutes. They're ready when the edges are slightly browned - keep checking as honey browns fast.

So yummy, I have never heard of 'monster cookies' but these are right up my alley. I'm so glad to have found them. Thanks for posting.
