Crockpot Beef And Lentils

- 28oz can diced tomatoes ( with juice) shopping list
- 19 oz lentils, rinsed and drained shopping list
- 1/2 cup diced celery shopping list
- 1 red pepper, diced shopping list
- 3 tbsp barbecue sauce shopping list
- 2 1/2 tbsp sweet chili sauce shopping list
- 1 tbsp balsamic vinegar shopping list
- 1 bay leaf shopping list
- salt and pepper to taste shopping list
- oil for cooking beef shopping list
- 1 lb. ground beef shopping list
- 1 1/2 tbsp flour shopping list
- 1/4 cup beef broth shopping list
How to make it
- Combine the first ten ingredients in the slow cooker
- heat oil and cook beef in a saucepan. When done drain and return to pan
- sprinkle the flour over the beef and mix well. Slowly add the beef broth scraping the brown bits on the bottom of the pan as you go
- add to the tomato mixture in the slowcooker
- stir everything really well
- cover and cook on low for 8-10 hours or on high 4 to 5 hours
- when ready remove the bay leaf

This tastes just like a Sloppy Joe! I love that it's really easy to hide the lentils in this recipe. I served it over rice and peas like pictured, but I think I'd like it better over toast or toasted buns. Next time I will add a diced onion to it or ...more
