How to make it

  • When dried apricots are used, let stand in cold water overnight.
  • Use the same water to cook the dried ones in until they are soft.
  • Put aside.
  • Grate or chop the onions very finely aswell as the garlic.
  • Boil for 10 minutes in the vinegar until soft.
  • Stirr in the sugar, salt and spices.
  • Stirr in the peeled fresh apricots or the soft , dried ones.
  • Boil for 30 - 60 minutes slowly until right consistency.
  • Pour it hot into, warm, clean class bottles and seal.
  • Use after a few days.
  • If you don't want a very chuncky chutney, you can always cut up the apricots finely.
