Apricot Chutney Recipe

Ingredients
  • 100 apricots, dried or fresh
  • 1 big onion
  • half a garlic
  • 1,25 kg sugar
  • 5 ml cayenne pepper
  • 12,5 ml salt
  • 25 ml ginger
  • 5 ml mustard
  • 750 ml vinegar

Directions
  1. When dried apricots are used, let stand in cold water overnight.
  2. Use the same water to cook the dried ones in until they are soft.
  3. Put aside.
  4. Grate or chop the onions very finely aswell as the garlic.
  5. Boil for 10 minutes in the vinegar until soft.
  6. Stirr in the sugar, salt and spices.
  7. Stirr in the peeled fresh apricots or the soft , dried ones.
  8. Boil for 30 - 60 minutes slowly until right consistency.
  9. Pour it hot into, warm, clean class bottles and seal.
  10. Use after a few days.
  11. If you don't want a very chuncky chutney, you can always cut up the apricots finely.
