Dads Vegetable Soup From Leftover Pot Roast Recipe
My Dad is the king of vegetable soup! I request the soup for my birthday dinner every year! I usually have the pot roast on a Sat or Sun, and make the veg soup Monday evening.

Ingredients
  • POT ROAST:
  • 2 - 3 lb. beef roast (or pork)
  • 2 - 3 lbs. potatoes, peeled and cut into large chunks (cut chunks into cold water and drain just before using)
  • 1 large white onion, sliced lenghtwise
  • 1 tub fresh mushrooms, quartered
  • 3/4 of 1 small bag baby carrots
  • 1 stalk celery, chopped
  • 4 T. Worcestershire
  • 4 T. margarine
  • Seasoned Salt
  • Meat Tenderizer
  • Garlic Pepper
  • 1 package beefy onion soup mix
  • Water to cover
  • VEGETABLE SOUP:
  • 1 small box jumbo elbow macaroni
  • Kosher salt
  • EVOO
  • 1 large can lucks pinto beans
  • 1 - 2 large cans whole tomatoes (i use Hunts, because they do not taste sweet, the sweet ones ruin it for me)
  • 1 can very young small early peas
  • 1 can niblet corn
  • 1 can italian or shelled green beans
  • more potato, onion, carrots if needed according to left overs
  • 4 T margarine

Directions
  1. POT ROAST:
  2. Place all ingredients for pot roast in slow cooker on medium and cook all day. Serve! If I am not wanting to have veg. soup with leftovers, I add a can of mushroom soup, and thicken that gravy with cornstarch and water when the roast is done. (To thicken, place cooker on stovetop - or transfer to stovetop pot if needed - boil juice, mix 2 heaping T of cornstarch in 1/4 c water. Stir into juice and cook until thickened, stirring often).
  3. VEGETABLE SOUP:
  4. Place leftover pot roast on stove eye and bring to simmer. There should be much juice left, if not, add a cup or so of chicken or beef broth.
  5. Add in 1 can of tomatoes
  6. Add in pinto beans - not drained
  7. Add in potatoes, onion, and carrots if adding more
  8. Boil macaroni in EVOO and pinch kosher salt until al dente - drain and rinse
  9. Add macaroni to soup (macaroni will continue to cook, and will just fall apart if not started at al dente stage)
  10. Add green beans and corn, partially drained
  11. Add peas last as they will burst open if cooked too long or stirred to often, drain partially
  12. Add margarine
  13. Simmer on low about 60 minutes total
  14. Add in 2nd can of tomatoes if needed for stock. Can add more beef or chicken broth if needed for stock
  15. This is a very thick soup. The next day you will probably need to add broth or the 2nd can of tomatoes, the macaroni will swell and soak up alot of the soup.
  16. This is not near as much trouble as it might look. It comes together quickly, and tastes wonderful! Bryan took a large bowl to work the other night, and had to share! Said 2 or 3 people were staring, and he finally had to offer them some! LOL

Sounds yummmy... My dads recipe was meatloaf... My mother hated meatloaf.. so when she was gone away... he would make it... I loved it.
