Fish And Cilantro Stew Recipe
This is my adaptation of a recipe recently printed in a cooking magazine.

Ingredients
  • 1 T olive oil
  • 2 cups chopped onion
  • 1 cup sliced celery
  • 1 cup sliced carrot
  • 3-4 cloves garlic, crushed
  • 1 jalapeno, minced
  • 2 cups cubed potato
  • 5 cups chicken stock
  • 15 oz can crushed tomatoes
  • 1/2 cup chopped cilantro
  • 1 pound cod, cut into bite sized pieces
  • 1 pound medium shrimp, shelled, deveined
  • 1 lime, zested and juiced
  • salt and pepper to taste

Directions
  1. Heat olive oil over med high heat. Saute onion, celery, carrot, garlic and jalapeno about 5 minutes.
  2. Add potato, tomatoes, and stock. Simmer til potatoes are tender.
  3. Add fish, shrimp, lime juice and zest and cilantro. Cook about 5 minutes til shrimp are pink and fish is cooked. Season to taste with salt and pepper.

Interesting recipe. I never cook with sea food. Any tips on what kind of cod to use...fresh or frozen...what about shrimp? I live in Utah, so our access to good sea food is pretty limited. Looks good!


I LOVE Cilantro was just talking about it in the mail through here, the smell is something else too. We just had it tonight on some simple chili. Since we get so much salmon free I try not to buy fish but this is something I have to try. I bet the kitchen smells soo good while you make this.

I must try this soon. Being from NM, I love anything with jalapenos and cilantro.


I did try it soon and it is deeeeelicious. Had it tonight for dinner with some wonderful cheese bread. The only change I made was about a cup of cilantro (I am addicted to cilantro) and two large jalapenos instead of one (I am a NM chili-head). I had a couple of chopped green chilis in the fridge, so I tossed those in. Made it nice and spicy. You feel as tho you are really eating healthy with this soup. I recommend it to all.
