How to make it

  • Filling: In a saucepan, combine corn starch, sugar and lemon juice. Mix well. Beat egg yolks, then add to corn starch mixture. Bring mixture to just boiling, then simmer gently for 5 minutes, stirring constantly. Remove from heat. Add margarine and grated lemon rind to thickened mixture and stir until thoroughly blended. Pour into baked pie shell.
  • Prepare Meringue: Preheat oven to 400 Beat egg whites on high speed until soft peaks form. Gradually add sugar. Continue to beat until stiff glossy peaks form. Spread mixture over filling, carefully sealing entire edge of crust to prevent shrinking. Bake for 8 to 10 minutes or until golden. Cool for 2 hours on a cooling rack. Refrigerate and serve cold.

    I have used this recipe for over 35 years to make my lemon pie and my family still goes hog wild after it even my husband who never eats pie.
    The meringue is not as high as most but is still a grea meringue, try beating your egg whites almost fully stiff before adding your sugar and add it slowly not all at once. Blessings my freind.

    I do have to warn you, though, that this recipe doesn't make as thick of meringue as some other recipes. I just don't have a better recipe for it, so I just posted the one that came with the recipe for the pie itself. (or it could be that I just suck at making meringue. LOL) But do let me know what you think if you try it.

    Sounds Great! I've seen the recipe on the box of corn starch but never tried it. I've always used the box lemon pudding/pie filling and it's good but I've gotta try making it from scratch using this recipe. As for the meringue, the corn starch recipe sounds so easy that I might as well try it too. I do things differently but always open for new ideas and I do love to bake pies :)
