I think I found this one on a corn starch box. I've used it for years, and it's never failed me. It is so easy, and takes so little to make it. I do cheat, though, and use a bought pie crust. I've never been able to master a pie crust!

I have never made lemon pie from scratch. I will have to try it.

Sounds Great! I've seen the recipe on the box of corn starch but never tried it. I've always used the box lemon pudding/pie filling and it's good but I've gotta try making it from scratch using this recipe. As for the meringue, the corn starch recipe sounds so easy that I might as well try it too. I do things differently but always open for new ideas and I do love to bake pies :)

I do have to warn you, though, that this recipe doesn't make as thick of meringue as some other recipes. I just don't have a better recipe for it, so I just posted the one that came with the recipe for the pie itself. (or it could be that I just suck at making meringue. LOL) But do let me know what you think if you try it.

I have used this recipe for over 35 years to make my lemon pie and my family still goes hog wild after it even my husband who never eats pie.
The meringue is not as high as most but is still a grea meringue, try beating your egg whites almost fully stiff before adding your sugar and add it slowly not all at once. Blessings my freind.
