This is a favorite cranberry salad, especially quick and easy, when the "cook" needs quick and easy! Great for buffets.... make ahead. Looks gorgeous in a clear glass bowl!

Ingredients
  • 1 pound fresh cranberries, coarsely chopped (not too course)
  • 3/4-1 cup sugar
  • 1 15-1/2 ounce can crushed pineapple, drained
  • 1 pint whipping cream, whipped
  • 1/2 pound miniature marshmallows
  • 1 cup nuts, chopped

Directions
  1. In processor bowl, chop cranberries until coarsely ground
  2. In medium bowl, place cranberries, add sugar and pineapple
  3. Chill for 2 hours
  4. In medium bowl, whip cream
  5. Fold in marshmallows with cream
  6. Chill for 2 hours
  7. After 2 hours, in *large bowl* combine cranberry mixture with whipped cream mixture, and add nuts
  8. Chill for at least another 1 hour
  9. NOTE: This keeps 1 week in refrigerator, but we never have any left! :)
