Middle Eastern Meatless Cabbage Rolls

- 1 1/2 cups scallions,chopped shopping list
- 1/4 cup olive oil shopping list
- 1 cup long grain rice-uncooked/ raw shopping list
- 1 Cup Canned chickpeas,drained shopping list
- 1/2 cup chopped parsley shopping list
- 1 cup fresh tomatoes,peeld and chopped shopping list
- 1/2 Tsp.allspice shopping list
- salt and pepper to taste shopping list
- 24 cabbage leaves shopping list
- 3 garlic cloves shopping list
- 1 Tsp.salt shopping list
- 1 Tsp.dried mint shopping list
- 1/4 cup lemon juice shopping list
How to make it
- Gently saute scallions in 1/4 cup Olive oil,2-3 minutes.Place in large bowl with all ingredients listed above cabbage leaves.Add salt and pepper to taste.
- Remove leaves from cabbage,careful not to tear them.Parboil in boiling water until limp enough to handle,cooking leaves in 2-3 batches.Drain in colander,rinse under cold water.
- Cut out large center rib of each leaf,any large leaves cut in half.Line bottom of a deep pot with leftover ribs and torn leaves.
- Place a generous Tblsp.of filling on bse of each leaf,roll once tuck in sides to contain filling,roll to the end of leaf.Repeat with remaining leaves and filling.
- Crush and mince garlic.Place in medium bowl with salt,mint,lemon juice,mix in olive oil.
- Pack rolls flap side down in prepared pot,sprinkling garlic lemon mixture between layers of rolls.Invert a plate on top of rolls,inside of pot to kep them intact during cooking.
- Add cold water to just cover rolls.Place pot lid on firmly.Bring to boil,reduce to simmer for 45 minutes.Remove pot from heat and set aside for 30 minutes.
- Serve at room temperture or cold.
