Creamy Mushroom Pasta Recipe

Ingredients
  • 1 (12 ounce) package dry fettuccine noodles
  • 1 tablespoon olive oil
  • 4 fresh mushrooms, sliced
  • 1 onion chopped
  • 1 tablespoon minced garlic
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 cup white wine
  • 1 cup chicken stock or vegetable broth
  • 1/2 cup light sour cream
  • 1 tablespoon cornstarch
  • 1/4 cup grated Parmesan cheese for topping

Directions
  1. Bring a large pot of lightly salted water to a boil. Add pasta. Cook for 7 minutes, or until tender. Drain.
  2. Meanwhile, heat oil in a skillet over low heat. Add the mushrooms and onions, and cook until soft and dark.
  3. Stir in the garlic, Italian seasoning, salt, white wine, and chicken broth. Increase the heat to medium, and cook stirring constantly for about 5 minutes.
  4. Reduce heat to low, and stir in the sour cream until smooth. Stir in cornstarch, and simmer for a minute to thicken.
  5. Stir in pasta, or spoon sauce over pasta.
  6. Serve, and top with grated Parmesan cheese.
