Mushroom Bisque

- 1 pound white button mushrooms, sliced shopping list
- 3/4 pound crimini mushrooms, sliced shopping list
- 2 cups chicken broth shopping list
- 1/3 cup dry white wine shopping list
- 2 shallots minced shopping list
- 9 Tbls butter shopping list
- 9 Tbls flour shopping list
- 4 cups half & half shopping list
- 1 large clove garlic minced shopping list
- 1 tsp rosemary shopping list
- 1/2 tsp thyme shopping list
- 1/2 tsp basil shopping list
- 1 tsp salt shopping list
- 1 tsp pepper shopping list
- dash of hot sauce shopping list
How to make it
- Grind mushrooms for a smoother bisque or use them sliced for a chunky bisque; place in a large pot with the shallots, broth and wine; simmer 15 minutes. Cover and simmer another 15 minutes. Melt butter on medium heat in a saucepan; whisk in flour until well blended let cook for 2 minutes. Add half & half stir until thickened. Add to mushroom mixture. Add spices, salt and pepper. Simmer 15-20 minutes more. Add hot sauce. Enjoy
