Shrimp soldiers

- 6-8 slices thick toasting bread, preferably a few days old shopping list
- 6-10 medium prawns, peeled and uncooked shopping list
- 2 spring onions, finely chopped shopping list
- 2 tablespoons sesame oil shopping list
- 1 teaspoon grated fresh ginger shopping list
- 1 egg white shopping list
- salt and freshly ground black pepper shopping list
- 2 teaspoons cornflour shopping list
- 3 tablespoons sesame seeds shopping list
- oil for deep frying shopping list
- sweet chilli sauce, to serve shopping list
How to make it
- Remove crusts from thick white toasting bread and cut into finger like "soldiers". Roughly chop the prawns and place in a food processor with the spring onions, sesame oil, ginger, salt, freshly ground black pepper, egg white and cornflour.
- Process until mixture forms a smooth paste, then spread the mixture thickly over each piece of bread, smoothing the edges. Sprinkle with sesame seeds. Fry in hot oil filling-side down, until golden brown. Remove and drain on paper towels. Serve immediately accompanied by sweet chilli sauce
