Ingredients

6-8 slices thick toasting bread, preferably a few days old

6-10 medium prawns, peeled and uncooked

2 spring onions, finely chopped

2 tablespoons sesame oil

1 teaspoon grated fresh ginger

1 egg white

salt and freshly ground black pepper

2 teaspoons cornflour

3 tablespoons sesame seeds

oil for deep frying

sweet chilli sauce, to serve

Directions

Remove crusts from thick white toasting bread and cut into finger like "soldiers". Roughly chop the prawns and place in a food processor with the spring onions, sesame oil, ginger, salt, freshly ground black pepper, egg white and cornflour.

Process until mixture forms a smooth paste, then spread the mixture thickly over each piece of bread, smoothing the edges. Sprinkle with sesame seeds. Fry in hot oil filling-side down, until golden brown. Remove and drain on paper towels. Serve immediately accompanied by sweet chilli sauce
