Parmesean Crusted Tilapia Fillets Recipe

Ingredients

2 tilapia fillets (can be fresh or frozen, If frozen thaw)

1/2 cup bread crumbs (can use plain or seasoned)

1/4 cup parmesean cheese

1 egg, beaten (I use egg beaters)

2 pats buter

cooking spray

Directions

Make egg wash.

In shallow dish, combine crumbs and cheese.

Dip fillets into egg and then into crumbs.

Spray pan with cooking spray.

Place fillets in pan and top with butter.

Bake 425 degrees until fish is flakey.

I use a crust/coating similar to this for fish and chicken. It is the closest to what I had on a RCCL cruise. My recipe adds parsley and garlic. Whirl everything in food processor. Can be frozen. Coat fish or chicken with egg, EVOO, mayo, or, my fav: grainy or dijon mustard mixed with egg and EVOO. This is my first visit here, and, voila---I find a wonderful recipe. Thanks!
