Ingredients
  • 2 1/2 cups of cubed cooked turkey, or chicken
  • 2 cups of cauliflower flowerettes, steamed five minutes, just below fork tender
  • 1/2 cup of chopped yellow onion
  • 1/4 cup of chopped red pepper
  • 2 ounces of chopped mushrooms, white button
  • 3 tbsp of minced parsley
  • 1/3 cup of heavy cream
  • 1 egg lightly beaten
  • 1 teaspoon of Worchestershire sauce
  • 1 tsp of best quality curry powder
  • 1/4 tsp of smokey paprika
  • 1/4 tsp of cumin
  • 1/4 tsp of turmeric
  • 3/4 tsp of salt
  • fresh ground black pepper
  • 2 generous tbsp. of oil
  • four poached eggs

Directions
  1. Preheat the broiler
  2. In a large bowl, combine turkey, cauliflower flowerettes, onion, bell pepper, mushrooms and parsley.
  3. Mix well.
  4. In a separate bowl, mix the heavy cream, the egg, the Worchestershire sauce, the paprika, cumin, turmeric, curry, salt and pepper.
  5. Pour over turkey mixture.
  6. Let stand 30 minutes, stirring occasionally.
  7. In a large oven proof skillet, heat the oil over medium heat.
  8. Add the turkey mixture and cover cook until the bottom is set, about five minutes.
  9. Transfer to the broiler and broil until the top is set and deeply golden about 7 minutes.
  10. Remove from broiler and top with poached eggs and serve.
