Curried Turkey Cauliflower Hash

- 2 1/2 cups of cubed cooked turkey, or chicken shopping list
- 2 cups of cauliflower flowerettes, steamed five minutes, just below fork tender shopping list
- 1/2 cup of chopped yellow onion shopping list
- 1/4 cup of chopped red pepper shopping list
- 2 ounces of chopped mushrooms, white button shopping list
- 3 tbsp of minced parsley shopping list
- 1/3 cup of heavy cream shopping list
- 1 egg lightly beaten shopping list
- 1 teaspoon of Worchestershire sauce shopping list
- 1 tsp of best quality curry powder shopping list
- 1/4 tsp of smokey paprika shopping list
- 1/4 tsp of cumin shopping list
- 1/4 tsp of turmeric shopping list
- 3/4 tsp of salt shopping list
- fresh ground black pepper shopping list
- 2 generous tbsp. of oil shopping list
- four poached eggs shopping list
How to make it
- Preheat the broiler
- In a large bowl, combine turkey, cauliflower flowerettes, onion, bell pepper, mushrooms and parsley.
- Mix well.
- In a separate bowl, mix the heavy cream, the egg, the Worchestershire sauce, the paprika, cumin, turmeric, curry, salt and pepper.
- Pour over turkey mixture.
- Let stand 30 minutes, stirring occasionally.
- In a large oven proof skillet, heat the oil over medium heat.
- Add the turkey mixture and cover cook until the bottom is set, about five minutes.
- Transfer to the broiler and broil until the top is set and deeply golden about 7 minutes.
- Remove from broiler and top with poached eggs and serve.
