How to make it
- combine soy sauce and brown sugar in a sealable plastic bag,place loin in the bag and refrigerate overnight.
- in a small bowl,combine mayonaise,sour cream,mustard powder and chives,cover and chill
- preheat oven to 325F.place loin in a shallow roasting dish with marinade and roast,basting occasionaly.Meat should register 160F when done.
- Let rest 10 minutes,then slice into 1/2 inch medallions,serve with mustard sauce.
