Ingredients
  • 1/3 cup dry red wine
  • 1/3 cup soy sauce
  • 2 Tbs. light brown sugar
  • 2# pork loin
  • 1/3 cup mayonaise
  • 1/3 cup sour cream
  • 1 1/2 Tbs. mustard powder
  • 1 Tbs. chopped chives

Directions
  1. combine soy sauce and brown sugar in a sealable plastic bag,place loin in the bag and refrigerate overnight.
  2. in a small bowl,combine mayonaise,sour cream,mustard powder and chives,cover and chill
  3. preheat oven to 325F.place loin in a shallow roasting dish with marinade and roast,basting occasionaly.Meat should register 160F when done.
  4. Let rest 10 minutes,then slice into 1/2 inch medallions,serve with mustard sauce.
