Ingredients
  • 1¼ cup butter, room temperature
  • 1 cup white sugar
  • 1 cup light brown sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 2½ cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ cup quick-cooking oatmeal, pulsed in a food processor for just a couple seconds
  • 12 ounce package vanilla (white chocolate) chips
  • 1 cups shelled pistachio nuts, coarsely chopped
  • ½ cup shelled pistachio nuts, whole

Directions
  1. In a large bowl, cream together butter and both sugars.
  2. Add eggs and extract, mixing well.
  3. Combine flour, baking powder, baking soda and oatmeal.
  4. Gradually add dry ingredients to creamed mixture, mixing until well blended.
  5. Stir in white chips and 1 cup of nuts.
  6. Shape batter into 1” balls and place on lightly greased baking sheets. These will spread some, so leave enough room.
  7. Flatten each ball with the bottom of a glass.
  8. Press a whole nut on the top of each cookie.
  9. Bake at 350 degrees for 10 to 12 minutes, until bottoms of cookies are just barely turning golden.
  10. Remove cookies from baking sheets and cool on waxed paper

I love pistachios. I always get a big bag in my Christmas stocking and it is one of my favorite gifts every year. These have all the yummy flavors I love. I'll make these for our annual cookie swap. Maybe I'll win the favorite cookie this year!!!


Just finished making these...yummy! I added some almond extract, and did't flatten them, and they turned out awesome. Thanks for the recipe, it's a keeper!
