Ingredients

How to make it

  • In a large bowl, cream together butter and both sugars.
  • Add eggs and extract, mixing well.
  • Combine flour, baking powder, baking soda and oatmeal.
  • Gradually add dry ingredients to creamed mixture, mixing until well blended.
  • Stir in white chips and 1 cup of nuts.
  • Shape batter into 1” balls and place on lightly greased baking sheets. These will spread some, so leave enough room.
  • Flatten each ball with the bottom of a glass.
  • Press a whole nut on the top of each cookie.
  • Bake at 350 degrees for 10 to 12 minutes, until bottoms of cookies are just barely turning golden.
  • Remove cookies from baking sheets and cool on waxed paper

    I love pistachios. I always get a big bag in my Christmas stocking and it is one of my favorite gifts every year. These have all the yummy flavors I love. I'll make these for our annual cookie swap. Maybe I'll win the favorite cookie this year!!!
