How to make it

  • Wash, dry and cut fruit into eighths (DO NOT PEEL).
  • Put sugar and tangerine segments into a food processor and process until finely chopped.
  • Add egg, milk and melted butter and process again.
  • Measure dry ingredients into a bowl and add liquid mixture.
  • Combine just until wet. Do not overmix.
  • Spoon into greased or paper lined muffin pan and bake at 375ºF for 12-15 minutes or until a knife inserted in the center comes out clean.
  • Let stand 5 minutes, take muffins out of pan and cool on a wire rack
  • Glaze with melted chocolate and sprinkle some chocolate chips on top.
