Whole Tangerine Muffins

- 2 small tangerines shopping list
- 1 cup sugar shopping list
- 1 large egg shopping list
- 1/2 cup milk shopping list
- 1/4 cup butter, melted shopping list
- 1/4 unsweetened applesauce shopping list
- 2 cups flour (I used whole spelt) shopping list
- 1 teaspoon baking powder shopping list
- 1 teaspoon baking soda shopping list
How to make it
- Wash, dry and cut fruit into eighths (DO NOT PEEL).
- Put sugar and tangerine segments into a food processor and process until finely chopped.
- Add egg, milk and melted butter and process again.
- Measure dry ingredients into a bowl and add liquid mixture.
- Combine just until wet. Do not overmix.
- Spoon into greased or paper lined muffin pan and bake at 375ºF for 12-15 minutes or until a knife inserted in the center comes out clean.
- Let stand 5 minutes, take muffins out of pan and cool on a wire rack
- Glaze with melted chocolate and sprinkle some chocolate chips on top.
