How to make it

  • You can create thousands of different quiches using the following guidelines and your own fav ingredients.
  • Preheat oven to 400 F.
  • Prepare custard - 2-3 eggs and 1/2 cup buttermilk and 1/2 cup salad dressing (like Chunky Blue Cheese) per quiche.
  • Prepare/bake crust - dock the crust first.
  • Brush crust with liquid custard to seal.
  • Sprinkle with grated Parmesan cheese.
  • Put the base layer of a cup of shredded cheese next - generally this will be a mild cheese like Mozzarella or Colby (can be same cheese as topping)
  • Sprinkle with a tablespoon of coarse bread crumbs
  • Add the filling like a cup of sauteed leeks and bacon - arrange over quiche using spoonfuls at a time.
  • Sprinkle with topping cheese like shredded Swiss
  • Add the liquid custard - a cup or more to reach to top of crust
  • Add either a dash of nutmeg or, for fish or shellfish quiches, Old Bay Seasoning
  • Bake in preheated oven at 400 for at least an hour until the top is puffy,
  • Cool on wire rack and then in fridge
  • Turn upside down on cutting board removing pan and slice into 8 slice with an electric knife. Replace quiche pan onto inverted quiche and flip back upright.
  • Put in large plastic bag and keep in fridge until ready to be used but no longer than 3 days.
  • FOOD SAFETY RULES especially apply to quiches because of the ingredients ... keep either under 40 F or over 140 for service!

    I just love a homemade quiche.
    I use 6 eggs in mine, with extra mature Chedder cheese, lightly fried chopped onions & bacon, & milk.
    Make my own wholewheat, millet cheese pastry, bit tricky to roll out, but worth the effort!

    I've been making mini crustless quiches for my son to eat for breakfast and came to your recipe for more ideas. I love the idea of adding blue cheese dressing! I'm going to make spinach, bacon and blue cheese quiches for myself this week and try using your dressing tip.

    Great info - quiches are one of my favorite foods...so versatile! Your hints and instructions will be very helpful. I've never heard of liquid custard, nor of "docking" a crust, so I am going to have to do some research, I see. thank you for all of your advice on how to create a great quiche - yes, the possibilites are endless, and that's why they're so fun to make!
