Fishes for Loaves

- 1/8 cup olive oil shopping list
- 1 cup thinly sliced white onion shopping list
- 2 tablespoons minced garlic shopping list
- 3 28oz cans diced tomatoes (with liquid) shopping list
- 1 cup roasted red pepper strips, drained shopping list
- 2 ½ cups dry white wine shopping list
- 2 cups low-sodium vegetable stock shopping list
- 2 cups sliced stuffed green olives shopping list
- ¾ cup drained capers shopping list
- ¼ teaspoon red pepper flakes shopping list
- 12 (6 ounce) fillets cod or halibut shopping list
- 2 tablespoons unsalted butter shopping list
- ¾ cup chopped fresh cilantro shopping list
How to make it
- Heat oil in a large skillet over medium heat.
- Add onions and cook, stirring, until soft, about 10 minutes.
- Stir in garlic and sauté 1 minute.
- Add tomatoes, red peppers, wine, stock, olives, capers, and red pepper flakes. Heat to a simmer, cook 5 minutes.
- Place fish into sauce.
- Cover, and gently simmer for 10 to 12 minutes or until fish flakes easily with a fork.
- Transfer fish to a serving plate, and keep warm.
- Increase the heat, stir in the butter and boil until the sauce thickens, about 10 minutes.
- Stir in cilantro. Serve sauce over fish.
