Chicken Thighs With Tomatoesolives And Capers Recipe

Ingredients
  • 8 boneless,skinless chicken thighs
  • 1t olive oil
  • 14t oregano
  • 4t. minced garlic
  • 1/2t pepper
  • 3/4c chopped parsley
  • 1/3c chopped pitted kalamata olives
  • 2t capers
  • 22 oz. can diced tomatoes,undrained

Directions
  1. Heat oil in lg. skillet. Add chicken;cook 4 mins. on each side. Remove from pan;keep warm
  2. Add garlic to pan and saute 30 seconds. Add remaining ingredients;scrape pan to loosen brown bits.
  3. Return chicken to the pan with accumulated juices. Reduce heat and simmer for 5 to 10 mins or until chicken is done.

My better half loves chicken thighs and they have become a family fav.I have a recipe to post and it is one my Daughter just made and I was proud ,she has shown no intrest in cooking for 28yrs.While taking a break from the medical field she is Nannying for an ER doc and needs to cook.I am sure she as I will love this one!!!!


This was delicious but took longer to cook than this says, my thighs were probably really big!
