Chicken Thighs with TomatoesOlives and Capers

- 8 boneless,skinless chicken thighs shopping list
- 1t olive oil shopping list
- 1/4t oregano shopping list
- 4t. minced garlic shopping list
- 1/2t pepper shopping list
- 3/4c chopped parsley shopping list
- 1/3c chopped pitted kalamata olives shopping list
- 2t capers shopping list
- 22 oz. can diced tomatoes,undrained shopping list
How to make it
- Heat oil in lg. skillet. Add chicken;cook 4 mins. on each side. Remove from pan;keep warm
- Add garlic to pan and saute 30 seconds. Add remaining ingredients;scrape pan to loosen brown bits.
- Return chicken to the pan with accumulated juices. Reduce heat and simmer for 5 to 10 mins or until chicken is done.
