These are really easy, throw together well, and everyone is always amazed when I make them, so I like them too! :)

Ingredients
  • 1 lbs chicken, cut in small pieces
  • 8 corn tortillas
  • 8 oz. mexican mix pre-shredded (real cheese)
  • green enchalada sauce large can
  • montreal seasoning
  • 2 tbsp. Oil
  • Oil for frying tortillas

Directions
  1. Pan fry chicken in 2 tbsp. of oil with montreal seasoning, set aside in bowl with half the can of green enchilada sauce, mix.
  2. Soften tortillas in hot oil, 2-3 seconds, set aside.
  3. In 9 x13 dish, pour 1/4 of remaining sauce in can in bottom of dish.
  4. Roll spoonfuls of chicken and cheese in tortillas, about 1/4 cup of chicken and 1/8 of a cup of cheese, until pan is full.
  5. Pour a consistent amount of green sauce around edges of tortillas and dish sides to prevent burning, too much sauce will cause enchiladas to be less "stable."
  6. Sprinkle cheese on top, bake 20 -30 minutes or until cheese is melted and bubbly.

I can't wait to try this...though I don't know where the heck I'm going to find Montreal Seasoning in Romania... maybe I can fake it? ;)
