Urulaikizhangu Podimas Indian Mashed Potatoes

- Red skin Potatotoes - 1 lb shopping list
- turmeric powder - 1/4 tsp shopping list
- Asafoetida or hing - A small pinch shopping list
- Thai chillies - 6 finely chopped shopping list
- ginger - 1/4 tsp grated shopping list
- Bengal gram(Yellow split pea) - 1 tbl.sp shopping list
- mustard seeds - 1/4 tsp shopping list
- Whole red chillies - 2 - 3 nos shopping list
- curry leaves - 6 Shredded into thin strips shopping list
- Fresh or frozen shredded unsweetened coconut- 1 fist full shopping list
- coriander leaves - A small bunch shopping list
- Freshly squeezed lemon juice - 3 tsp. shopping list
- olive oil - 2 tsp shopping list
- salt - 1 tsp or as reqd shopping list
How to make it
- 1)Wash and prick potatoes & pop it in the microwave for 4 min. It has to cook well.
- 2)Let it rest for few sec. see whether its cooked, if not, cook for a few more min. Keep it aside, cool and peel of the skin when it becomes handleable.
- 3)Mash them lightly w/ salt and keep it aside.
- 4)Heat oil in a pan or a Wok and add mustard seed when it becomes warm..
- 5)Splutter mustard seeds, then add the yellow split peas. Let it brown.
- 6) Then add curry leaves, red chilies, hing, & tumeric.

- 7)Add the mashed potatoes and mix well.
- 8) Pulse together thai chillies and coconut together in a food processor and add it to the podimas
- 9)Let this cook for a few mins.
- 10)Garnish with coriander leaves .
- 11) Take it out of the heat. Wait for a few min. & then add the lemon juice and mix well.
- NOTE:
- 1. You can omit the split peas if its hard for you to find.
- 2. Since every microwave cooking times are different you need to check on them. The more its cooked the better it gets.
