How to make it

  • Grate onion, either with a food processor or by hand.
  • Finely chop cilantro and parsley.
  • Mix together onion, cilantro, parsley, spices, and meat until smooth. Salt and pepper to taste. If the meat is too dry to hold together, add a few tablespoons of water.
  • Take a large spoonful (about 2-3 tablespoons) of meat and form into a small log, about 1 inch in diameter. Repeat until all meat is used up.
  • Cook the kebabs in a large non-stick skillet over medium-high heat, turning so that they are browned on all sides, approximately 5 minutes. Kebabs can also be pressed around skewers and grilled or broiled.
  • Serve hot with pita bread.
