Kebabs Recipe
These versatile kebabs can be made very quickly, especially with the aid of a food processor. The herbs, meats, and even spices can be adjusted according to taste. But grating the onion is key!

Ingredients
  • 1 pound ground lamb, turkey, pork, or beef
  • 1 medium onion
  • 1/2 C cilantro, parsley, or mint (or a combination)
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1/2 tsp ground ginger
  • 1/2 tsp cinnamon
  • salt and pepper
  • 4 loaves of pita bread

Directions
  1. Grate onion, either with a food processor or by hand.
  2. Finely chop cilantro and parsley.
  3. Mix together onion, cilantro, parsley, spices, and meat until smooth. Salt and pepper to taste. If the meat is too dry to hold together, add a few tablespoons of water.
  4. Take a large spoonful (about 2-3 tablespoons) of meat and form into a small log, about 1 inch in diameter. Repeat until all meat is used up.
  5. Cook the kebabs in a large non-stick skillet over medium-high heat, turning so that they are browned on all sides, approximately 5 minutes. Kebabs can also be pressed around skewers and grilled or broiled.
  6. Serve hot with pita bread.
