Japanese-Style Carrot Sticks Recipe
These carrot sticks are good for serving with cocktails or along side a sandwich at lunch time

Ingredients
  • 1 cup rice vinegar (not seasoned)
  • 1/3 cup sugar
  • 1/2 tsp salt
  • 1 lb. carrots, cut into 3-4 inch sticks

Directions
  1. In a saucepan cook vinegar, sugar, and salt over moderately high heat, stirring occasionally until sugar is dissolved and mixture is hot.
  2. Put carrots in a heatproof ceramic or glass dish and pour vine20gar mixture over them.
  3. Marinate carrots, covered and chilled, at least 4 hours and up to 1 day.
  4. Makes about 4 cups
