Breakfast Surprise Recipe
Use up whatever you have in your fridge to make a breakfast they can't resist eating. My kids do this every mother's day for me and call it mother's day surprise.

Ingredients
  • Left over baked potatoes, chopped up skins and all
  • 1 large onion chopped
  • a green pepper chopped (if you have one)
  • 2 cloves of garlic minced
  • olive oil
  • eggs
  • cheese
  • breakfast meat, ham sausage or bacon (chopped)

Directions
  1. Heat the olive oil in a large skillet
  2. add the onion and the garlic (and the pepper)
  3. saute for about 5 minutes
  4. toss in the potatoes
  5. Get them nice and brown!
  6. Add the cooked breakfast meat
  7. Scramble a few eggs and pour over the entire concoction
  8. cook until almost done and add the cheese
  9. Continue cooking until it is all cooked through and the eggs are firm
  10. Serve piping hot with toast .
  11. You can make this camping too just toss it all in your dutch oven.
