Savory and simple, you don't have to pre-cook the turkey meatballs, they simmer in the broth and gain extra flavor. Yum.

Ingredients
  • 32 ounces of chicken broth, low salt
  • 2 ribs of celery with the leaves, chopped quite fine
  • 2 carrots, peeled and thinly sliced so they cook faster
  • 1/2 cup of onion chopped
  • 1 1/2 tbsp of butter
  • 1 egg beaten slightly
  • 1/2 cup of dry bread crumbs
  • 1 tbsp of dried parsley flakes
  • 2 tbsp of parmesan cheese grated
  • 1/4 tsp of poultry seasoning
  • 1/4 tsp of pepper
  • 1 tablespoon of worchestershire sauce
  • 1/2 lb. of lean ground turkey
  • 3 oz. of uncooked tagliatelle noodles

Directions
  1. In a large sauce pan, bring the broth, celery and carrot to a rolling boil.
  2. Reduce heat, cover and simmer for ten minutes.
  3. In a small skillet, saute the onion in the butter until tender.
  4. Put in large bowl and cool off.
  5. Add the egg, bread crumbs, parsley, poultry seasoning, parmesan, pepper and Worchestershire to the onion.
  6. Add the turkey and mix well.
  7. Shape into 1 inch balls.
  8. Add the meatballs to the simmering soup. Raise heat and bring to a boil.
  9. Reduce heat again, cover and simmer for 15 minutes.
  10. Break noodles in half and add to the broth and cover and simmer about 8 minutes until the noodles are tender.
  11. Serve sprinkle with more parmesan cheese and some chopped parsley.
