How to make it

  • In a large sauce pan, bring the broth, celery and carrot to a rolling boil.
  • Reduce heat, cover and simmer for ten minutes.
  • In a small skillet, saute the onion in the butter until tender.
  • Put in large bowl and cool off.
  • Add the egg, bread crumbs, parsley, poultry seasoning, parmesan, pepper and Worchestershire to the onion.
  • Add the turkey and mix well.
  • Shape into 1 inch balls.
  • Add the meatballs to the simmering soup. Raise heat and bring to a boil.
  • Reduce heat again, cover and simmer for 15 minutes.
  • Break noodles in half and add to the broth and cover and simmer about 8 minutes until the noodles are tender.
  • Serve sprinkle with more parmesan cheese and some chopped parsley.
