Turkey Meatball Tagliatelle Soup

- 32 ounces of chicken broth, low salt shopping list
- 2 ribs of celery with the leaves, chopped quite fine shopping list
- 2 carrots, peeled and thinly sliced so they cook faster shopping list
- 1/2 cup of onion chopped shopping list
- 1 1/2 tbsp of butter shopping list
- 1 egg beaten slightly shopping list
- 1/2 cup of dry bread crumbs shopping list
- 1 tbsp of dried parsley flakes shopping list
- 2 tbsp of parmesan cheese grated shopping list
- 1/4 tsp of poultry seasoning shopping list
- 1/4 tsp of pepper shopping list
- 1 tablespoon of worchestershire sauce shopping list
- 1/2 lb. of lean ground turkey shopping list
- 3 oz. of uncooked tagliatelle noodles shopping list
How to make it
- In a large sauce pan, bring the broth, celery and carrot to a rolling boil.
- Reduce heat, cover and simmer for ten minutes.
- In a small skillet, saute the onion in the butter until tender.
- Put in large bowl and cool off.
- Add the egg, bread crumbs, parsley, poultry seasoning, parmesan, pepper and Worchestershire to the onion.
- Add the turkey and mix well.
- Shape into 1 inch balls.
- Add the meatballs to the simmering soup. Raise heat and bring to a boil.
- Reduce heat again, cover and simmer for 15 minutes.
- Break noodles in half and add to the broth and cover and simmer about 8 minutes until the noodles are tender.
- Serve sprinkle with more parmesan cheese and some chopped parsley.
