This is a heavenly dessert. Meringue layers filled with whipped cream, pineapple, and maraschino cherries, and refrigerated for 12 or more hours before serving.
Ingredients
- 8 egg whites shopping list
- 2 cups sugar shopping list
- 1 tablespoon vinegar shopping list
- 1 teaspoon vanilla shopping list
- 2 cups heavy cream (to be whipped) shopping list
- 2 cups crushed pineapple (drained) shopping list
- 1 cup chopped maraschino cherries shopping list
How to make it
- Beat egg whites until stiff
- Add sugar gradually
- Add vinegar, vanilla
- Beat until very thick
- Spoon into 2 greased 9 inch cake pans
- Bake at 300 degrees for 60-75 minutes
- Turn heat off
- Leave in oven 1 hour
- Cool thoroughly before turning out
- In large bowl, whip cream until stiff
- Combine whipped cream, drained pineapple and cherries
- Place one layer on a cake plate, then spread layer with cream mixture, top with other layer, and completely cover top and sides like icing a cake
- Refrigerate for 12 or more hours before serving
- This is heavenly!
