chorizo pumpkin soup

- 5 cups chicken stock shopping list
- 3 cups pumpkin puree shopping list
- 3/4 cup heavy cream shopping list
- 1# chorizo-hopped,coursly shopping list
- 2 Tbs. oregano shopping list
- 1/2 tsp. cumin shopping list
- 5 cloves of garlic,peeled and chopped finely shopping list
- 2 potatoes,peeled and diced into 1/2" cubes shopping list
- 1/2 cup cilantro,chopped shopping list
- 1/2 & 1/3 cups of chopped onions shopping list
- 1 Tbs. oil shopping list
How to make it
- heat oil in a large pot. saute the 1/3 cup of onions and garlic over medium heat, about 1 minute
- carefully add stock,pumpkin,chorizo and potaroes. stir in oregano and cumin. bring to a boil,then turn down heat to a simmer. simmer for 45 minutes, or until potatoes are soft.
- remove from heat and let cool down for 10 minutes.
- stir in cream and serve immediately topped with a Tbs. each, of chopped onions and cilantro.
