Ingredients
  • 5 cups chicken stock
  • 3 cups pumpkin puree
  • 3/4 cup heavy cream
  • 1# chorizo-hopped,coursly
  • 2 Tbs. oregano
  • 1/2 tsp. cumin
  • 5 cloves of garlic,peeled and chopped finely
  • 2 potatoes,peeled and diced into 1/2" cubes
  • 1/2 cup cilantro,chopped
  • 1/2 & 1/3 cups of chopped onions
  • 1 Tbs. oil

Directions
  1. heat oil in a large pot. saute the 1/3 cup of onions and garlic over medium heat, about 1 minute
  2. carefully add stock,pumpkin,chorizo and potaroes. stir in oregano and cumin. bring to a boil,then turn down heat to a simmer. simmer for 45 minutes, or until potatoes are soft.
  3. remove from heat and let cool down for 10 minutes.
  4. stir in cream and serve immediately topped with a Tbs. each, of chopped onions and cilantro.

I'm the only one here who eats chorizo and I use soy chorizo but it should work fine in this recipe, I think. Thanks for sharing this - I'll try it!


Robert.. this was great! We had some extra pumpkin so we made this for a first coarse for our dinner today! Some had never had Pumpkin except in a pie or bread.. and were kind of skeptical, BUT... THEY LOVED IT! Nice and savory! I added a little more cumin... my favorite spice!

Egads...chorizo.. been trying to get that down here in Mississippi since I arrived..no such luck. I miss making it in somany different ways! When I find it again I'll surely be coming back after this recipe!!! 8yrs of preparing and eatting mexican foods... nothing like chorizo fried with sugar added to make a bbq from it, I burn 2 yellow corn tortillas cover it with the bbq chorizo and cover all that with pintos..my my yes I do have an odd taste..oh n dont forget the cilantro to top it off!!! Thanks hun!
