Ingredients
  • 3 lbs. chicken wings
  • 3 eggs, beaten
  • 1 cup cornstarch
  • vegetable oil for frying
  • 1/4 cup soy sauce
  • 1/2 cup vinegar
  • 1/2 cup sugar
  • 3 tbsp. ketchup
  • 1 tsp. salt
  • 1/2 cup red currant jelly
  • 2 tbsp. lemon juice

Directions
  1. Cut wings at joint, discard tips. Roll wings in beaten eggs and then cornstarch. Fry in a small amount of oil until golden brown.
  2. Remove wings with a slotted spoon and place on a shallow cookie sheet.
  3. Combine rest of ingredients in a small saucepan and heat to boiling, stirring occasionally.
  4. Reduce heat and simmer for 10 minutes. Pour over chicken wings.
  5. Bake at 350ºF for 30 minutes, or until well glazed
